Enso HD Bunka Knife
THE PUSH CUT MASTER
The Bunka translates to “culture”, which is a cross between a Nakiri and Gyuto Knife. This all-purpose tall blade Enso HD Bunka Knife is suitable for cutting fruits, vegetables, fish, meat and more. The belly of the blade makes this the ultimate push cut master for either long or short cuts. The triangular tip area is particularly useful for detailed work.

The Handle
All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster and end cap.
The enclosed full tang handle construction is seamless and ensures strength, durability and balance.
The Blade
Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention.
Every blade has a hammered or sashimi finish.
The Edge
Each Enso HD knife is heat treated to a 61 on the Rockwell scale and are hand ground to approximately 12° cutting angle.
The blades feature a double bevel (50/50) edge for right or left-handed use.
Japanese Blade Kanji
Each Enso HD knife features a machine-pressed blade kanji. The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last three characters are Nippon Sei, which means Made In Japan.
