All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster and end cap.
The enclosed full tang handle construction is seamless and ensures strength, durability and balance.
Enso HD blades are constructed of 37-layer stainless steel Damascus with a VG-10 steel cutting core for excellent edge retention.
Every blade has a hammered or sashimi finish.
Each Enso HD knife is heat treated to a 61 on the Rockwell scale and are hand ground to approximately 12° cutting angle.
The blades feature a double bevel (50/50) edge for right or left-handed use.

The Enso HD Chef’s Knife is designed for slicing, dicing, and chopping a full range of fruits, vegetables, and more. With its curved belly, the Chef’s knife can be gently rocked through fresh herbs or spices to produce a very fine mince.

The Enso HD Bread Knife is sharp enough to slice through tough crusts while still producing full, even slices. The scalloped edge makes cutting crusty bread and cake easily, allowing you to glide through without creating excessive crumbs and also works well to slice large fruit such as pineapple or watermelon.

The Enso HD Santoku Knife works exceptionally well on vegetables, proteins, and fruit for slicing, dicing, and chopping. The slight belly curve enables the cook to rock the blade slightly.

Japanese Blade Kanji
Each Enso HD knife features a machine-pressed blade kanji. The first two Japanese characters of the kanji are Enso which means Harmony in Japanese. The last three characters are Nippon Sei, which means Made In Japan.
